Pioneer Woman's Beef with Snow Peas

  Ingredients 1-½ pound Flank Steak (sliced thin against the grain) ½ cups Soy Sauce 3 Tablespoons Sherry 2 Tablespoons Brown Sugar 2 Tablespoons Cornstarch 1 Tablespoon   Minced Fresh Ginger 8 ounces Fresh Snow Peas 5 chopped Scallions 3 Tablespoons Peanut Oil Crushed Red Pepper 4 cups cooked Jasmine Rice Directions Mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss. Reserve the other half of the liquid. Heat oil in a heavy skillet or wok over high heat. Add snow peas and stir fry for one minute. Remove to a plate. Allow pan to get hot again. Add half the meat mixture and add half the scallions. Sear meat on both sides until brown. Remove to a clean plate. Repeat with remaining meat, allowing pan to get very hot again first. After all the meat is cooked, add the plateful of meat, the remaining marinade, and the snow peas.   Ingredients: 2 tablespoons all-purpose flour 2 tablespoons cornstarch 1/4 teaspoon baking soda 1/4 teaspoon baking powder 4 tablespoons soy sauce 1 tablespoon dry sherry 2 tablespoons water 1 teaspoon vegetable oil 1 dash sesame oil 1 pound skinless, boneless chicken breast meat - cubed 1 cup chicken broth 1 cup white sugar 2 tablespoons distilled white vinegar 2 tablespoons sesame oil 1 teaspoon chile paste 1 clove garlic, minced 1/4 cup cornstarch 1/2 cup water 1 quart vegetable oil for frying 2 tablespoons toasted sesame seeds 4 cups cooked white rice Directions: 1. Whisk together flour, cornstarch, baking soda, and baking powder into a bowl. Pour in 2 tablespoons soy sauce, sherry, 2 tablespoons water, 1 teaspoon vegetable oil, and a dash of sesame oil and mix until smooth. Fold in chicken until coated with the batter, then cover, and refrigerate for 20 minutes. 2. Beef & Broccoli Stir-Fry

Marinade: 1 lb. beef sirloin (sliced thin against the grain and 1/2 inch thick) 1 teaspoon sugar 1 teaspoon salt 2 tablespoons soy 2 tablespoons lime juice 2 tablespoons minced ginger root 1/4 cup green onions place all the ingredients in a bag and marinade over night Sauce: 1 tablespoon corn starch 1 tablespoon soy 1 tablespoon sherry 1/4 cup chicken broth 1 teaspoon sugar 2 teaspoons sesame oil Mix in a small bowl and set aside Stir-Fry 3 tablespoons vegetable oil 1 tablespoon minced fresh ginger root 1 tablespoon minced garlic 1/2 tablespoon red pepper flakes 1 lb brocolli florets green onions (chopped) cooked rice Directions: Mix cornstarch, soy, sherry , broth, sugar and sesame oil in a small bowl.  Heat a large skillet and add 2 tablespoons of oil.  Remove beef from marinade and stir-fry in batches for 1-2 minutes until browned.  Set beef aside on a warm plate.  Be sure to cook in batches so not to over crowd, or the beef will get mushy.  Once all the be...

Spicy Orange Chicken

Spicy Orange Chicken 3/4 cup orange juice 3 tablespoons of soy sauce zest from one orange 1 tablespoon cornstarch Mix these ingredients in a small bowl and set aside 2 tablespoons of olive oil 1 teaspoon crushed red pepper 1 lb chicken breast, sliced into 1/2 inch pieces, seasoned with salt & pepper 1 cup snap peas 1 small red onion sliced thin cooked jasmine rice Saute the onions & crushed red pepper in the olive oil until translucent, add chicken and cook for 6-7 more minutes until chicken is cooked though.  Add snap peas and orange juice mixture and let simmer until the liquid is reduced and thickened. Serve over hot cooked rice and garnish with bean sprouts, green onions, jalepenos, or chopped cashews.   Recipe Adapted from Epicurious

Lance's Spicy Thai Shrimp Stir Fry

    This recipe was actually created by my dad, Lance.  He is a fantastic chef and is always cooking up fancy dishes for us.  He made this recently while visiting us in Virginia and it is one of my all time favorites!   It is light and healthy, and filled with tons of vegetables.  He adds sliced pork when he prepares it, which is also really delish!    Ingredients: 3 T. vegetable oil 3 T. soy sauce 1 T. rice wine vinegar 2 t. fish sauce 2 t. sesame oil 1 T. chopped ginger 2 green onions chopped (save some for garnish) 1 T. chopped garlic You may want to add more soy, sesame oil, fish sauce & rice wine depending on your taste. 3-4 cups chopped napa cabbage (this may seem like a lot, but it cooks down) 1 cup shredded carrots 1 cup asian mushrooms chopped 1 cup bean sprouts 1 cup snow peas 1 small can of sliced drained water chestnuts 1 small can of drained bamboo shoots 1 lb. peeled & deveined shrimp c...
