Smokehouse Mac & Cheese

Ingredients: 2 tablespoons butter 3 tablespoons flour 1 cup milk 1 12-ounce can evaporated milk 2 cups (8 ounces) shredded smoked gouda cheese 3 ounces cream cheese 1 teaspoon salt 1/2 teaspoon red pepper 8 ounces of smithfield country ham, chopped 16 ounces cooked macaroni Directions: Preheat oven to 350 degrees.  Melt the butter in a large skillet.  Whisk in butter to make a roux.  Stir until smooth.  Whisk in milk and evaporated milk. Stir for 3-5 more minutes until slightly thickened.  Stir in gouda cheese 1 cup at a time and mix until cheese is melted.  Add cream cheese, salt and red pepper.  Stir until blended.  Stir in chopped country ham.  Stir in macaroni.  Pour into a greased 9x13 baking pan.  Bake for 30 minutes until hot & bubbly.  Recipe adapted from the Junior League of Hampton Roads Cookbook My Mama Made That

Junior League French Quarter Cheese Spread

This is a holiday favorite!  Ingredients: 8 oz softened cream cheese 1 garlic clove, minced 1 T. grated onion 1/4 cup butter 1/4 cup dark brown sugar 1 t. worcestershire sauce 1/2 t. mustard 1 cup chopped pecans Directions: Combine cream cheese, garlic and onion in a bowl.  Mix well and shape ito a 6-inch disk, 1 inch thick.  Place on a serving plate and chill in refrigerator Melt butter over meidum heat with brown sugar, worcestershire, mustard and pecans in a saucepan, until warm and blended.  Pour pecan mixture over cheese disk and return to refrigerator until 1 hour before serving.  Remove from refrigerator and let stand until room temperature is reached.  Serve with assorted breads, crackers, and fruit.  Recipe adapted from the Junior League Cookbook "My Mama Made That"

Junior League "That Tailgate Dip"

That Tailgate Dip From the Junior League of Hampton Roads new cookbook "My Mama Made That"  This is one of my all time favorite cookbooks.  It has so many easy, weeknight family recipes!  And I love to wear my Jessie Steele Apron when I am cooking:)  It makes me feel like a housewife from the 60's It is the best dip and only consists of six ingredients!  I forgot to include the cheddar cheese in the photo, so don't forget to add it to your recipe! Ingredients: 8 oz. cream cheese softened 8 oz. shredded cheddar cheese 1 stick of butter softened dash of cayenne pepper onion or garlic powder 1 can Rotel Diced Tomatoes & Green Chiles 1 green onion chopped (*not part of original recipe, but I like to sprinkle these on top) salt & pepper Mix all ingredients well, top with chopped green onion & serve with pretzels, or tortilla chips! Super Bowl Sunday!

I am not a huge a football fan, but I do love an excuse to make tons of yummy food! and stare at Tom Brady:)  Of course I am a Patriots fan!  We started our day with Gluten Free Blueberry Pancakes with New Hampshire Maple Syrup and Smithfield Bacon.  The syrup is from our family friend's cattle farm: Star Lake Farm.  Eveytime I make pancakes it reminds me of my mother making big breakfasts on the weekend.  I plan to cook & eat all day!   In my Jessie Steele apron of course! The Jessie Steele apron make the front cover of our Junior League cookbook!  "My Mama Made That-Virginia Favorites"  It is my personal favorite and has tons of quick weeknight recipes! Here is our gameday spread!!!! and a sleepy King Louis!
