Vintage Chalkboard Love!

I have a new fascination with old vintage chalkboards.  And, it turns out, they are super easy to make yourself!  All you need is an old framed picture or canvas, some spray paint and some chalkboard paint.  I got my frame for $10 at the local thrift store, spray painted the frame gold and painted the canvas with chalkboard paint.  Super easy!  I also had some framed oil paintings that were left to us from our great aunt.  They were nice oil paintings, just not really my style.  I decided to turn them into chalkboards too!  I figured Aunt Dorothy would rather me use her frames that let them sit in the garage gathering dust.  Right? Crispy Creamy Tex-Mex Chicken Wraps

Ingredients: 2 cups cooked rice 2 cups cooked chicken 1 can black beans drained & rinsed 1 green onion chopped 1/4 cup cilantro chopped 2 T lime juice 1 t. cumin 1 t. chili powder 1/2 t. garlic salt 2 cups shredded cheese sour cream 6 large flour tortillas Mix rice, onion, cilantro, lime juice, cumin, chili powder, & garlic salt and set aside. Sprinkle cheese down center of tortilla, top with 1/6 chicken, 1/6 black beans, 1/6 rice mixture and some sour cream.  Fold ends in and roll burrito style and press flat.  Spray with cooking spray and cook on a medium-hot non-stick pan/griddle for 2-3 minutes per side.  Serve with salsa, guacamole & sour cream!

Crockpot Freezer Meals {Part 2}

  Welcome to Part 2 of my crockpot freezer cooking series!!!         You can find Part 1, Part 3 & Part 4 here:   Crockpot Freezer Cooking Part 1   Crockpot Freezer Cooking Part 3 Crockpot Freezer Cooking Part 4 I love preparing crockpot freezer meals on the weekend.  I have plenty of time to prepare everything and get ready for the week.  Having meals prepared prevents us from eating out as much and we always have a healthy, homecooked meal ready every night! This weeks menu includes: Meatloaf with Rosemary Potatoes Honey Sesame Chicken w/ Broccoli White Chicken Chili Beer & Beef Stew Beef Stroganoff Chop and prepare all vegetables and set aside.    Label all bags with recipe title, date, additional ingredients, cook times, etc.   All meals will cook fine from frozen, but be sure not to add cold/frozen meals into a hot crockpot as it can crack. Many people have concerns about putting frozen food in the crockpot, but I have never had an issue. It is my understanding that

Artisan Bread

This is seriously the best bread recipe ever!  It takes seconds to put together, but plan ahead as you should leave the dough to rise overnight.  I started mine on a Saturday afternoon and baked it mid day Sunday.  It may seem like a process, but it's totally worth it!  This recipe makes a huge loaf, so we had delicious crunchy bread for sandwiches and snacking all week.  This will surely become your go to bread recipe!  Artisan Bread 6 cups bread (recommended) or all-purpose flour 1 package instant or active-dry yeast 2 1/2 t. salt 2 2/3 cup warm water In small bowl combine yeast, salt and warm water. Let sit for 10-15 minutes until yeast activates and bubbles.  In a large bowl add flour, mix in yeast mixture.  Blend until all the ingredients are well incorporated; the dough should be wet and sticky. Cover the bowl with plastic wrap. Let the dough rest 12-18 hours on the counter at room temperature. Dough should double in size. You will need lots of additional flour at this point.
