Blackened Chicken Caesar Salad

 
 
Dressing:
3 cloves garlic peeled and minced
3/4 cup mayo
5 anchovy filets, minced
3 tablespoons parmesan cheese
1 teaspoon worcestershire
1 teaspoon dijon
1 tablespoon lemon juice
salt & pepper
1/4 cup olive oil
 
Whisk the ingredients in a small bowl and set aside
 
For the Salad: 
3 heads of chopped rinsed romaine lettuce
1 lb. chicken breast or tenders
3 tablespoons cajun blackening seasoning
2 tablespoons oil
 
Heat oil over medium heat in a skillet.  Coat the chicken in the blackening seasoning and cook for 7-10 minutes until juices run clear.  Cut into one inch pieces.
 
To assemble the salad, toss romaine with dressing until coated well.  Place on a large plate or serving bowl.  Top with blackened chicken, parmesan and croutons.
